–Seven Layer Dip: The refried beans add fiber, the guacamole and olives supply heart-healthy fats, and the lettuce and tomatoes add some bulk but with very few calories.
Use fat-free cheese and low-fat sour cream. (No one will notice the difference.)
–Chili: Diced onions sautéed in olive oil provide a dose of Vitamin C, and folate. Add black beans. The darker the beans, the more antioxidants. Make sure there are more beans than meat for maximum fiber.
For more antioxidants, add lots of chili powder and cumin.
–Veggie Tray: Serve with hummus in delicious flavors like roasted red pepper or garlic herb. Skip the ranch dressing and opt for fat-free yogurt.
–Veggie Skewers: These are a very easy and delicious option if you are bar-be-cuing. Chop up large portions of all your favorite vegetables—mushrooms, red peppers, tomatoes, zucchini, etc.
Sprinkle them with olive oil and a favorite spice and then place them on the grill.
–Popcorn: Keep a large bowl of air-popped popcorn in arms reach, rather than that bag of Doritos. For an added kick, drizzle on Tabasco.
